Summer is now gone and if your chickens were as productive as mine I can only assume your egg baskets are now overflowing.

When Life Gives You Eggs: Make Quiche

Not just any ole’ quiche: mini muffin-tin quiches.

I’m telling you, if you haven’t made these before, then you’re about to discover a new go-to for anytime you’ve got spare eggs (which, let’s be honest, is almost all the time).

They’re so easy to make and you can even freeze them for an easy fix anytime you’re craving!

What You’ll Need:

  1. Muffin Tin (For 12 Small Quiches)

  2. Pie Crust Pastry (Short Crust Pastry)

  3. 6 Eggs

  4. 1 Cup Of Milk

  5. 1 & ½ Cups Of Shredded Mozzarella Cheese

  6. ½ Cup of diced onion

  7. ½ Cup Of Chopped bacon (Or Bell Pepper)

  8. Chives (For Garnish)

How To Make Mini Muffin-Tin Quiches:

  1. Get your ingredients ready, preheat your oven to 350°F, and grease up your muffin tin.

  2. Cut your pastry in circles so that it fills up each muffin groove.

  3. Bake the empty shells in the oven for 8-10 minutes until they are crispy.

  4. While your pastry shells are baking, mix your eggs, milk, cheese, onion, and bacon (or bell pepper) in a large bowl.

  5. When your pastry shells are done, gently pour an even amount of mix into each of the pie shells and return to the oven for a further 20 minutes (or until fully cooked!).

  6. Optionally, sprinkle chives to serve.

Tip: As soon as they are done, take a butter knife and run it around the outside of the quiche to prevent it from sticking to the tray!

Another Tip: If you can’t eat them all at once, you can easily keep them in the fridge for four days, or in your freezer for a month or so!

The best thing about raising bantams? They’re only half the size – so you can have twice as many!
